Verschiedene Sorten von Eomuk

Eomuk (koreanisch 어묵) ist eine Zutat der koreanischen Küche,[1] die aus gemahlenen Meerestieren und weiteren Zutaten hergestellt wird. Sie ähnelt dem japanischen Chikuwa und dem vietnamesischen Chả cá.

Eomuk besteht aus Fisch-, Krabben- oder Tintenfischmehl, Mehl, Kartoffelstärke, Zucker und Gewürzen.[2] Die Zutat wird häufig in Suppen und Eintöpfen verwendet oder auf Straßenständen in Form von Stäbchen als Imbiss verkauft,[1] häufig zusammen mit Reiskuchen.[3] Er spielt eine wesentliche Rolle bei der Zubereitung von Tteokbokki,[4] einem beliebten koreanischen Gericht aus Reisstöcken in scharfer Sauce.

Erste Erwähnungen von Eomuk können in Korea bis in das Jahr 1719[5] zurückverfolgt werden.[2]
