Bregenwurst

Xúc xích Bregenwurst (cũng như Brägenwurst) là một loại xúc xích Đức phổ biến ở một số vùng của Hạ Saxony và Saxony-Anhalt.

Theo truyền thống, nó được làm từ thịt lợn, thịt ba chỉ và óc lợn hoặc bò,[1][2] tuy nhiên óc động vật đã bị cấm trong thực phẩm ở Liên minh Châu Âu từ năm 2001, do hậu quả của các vụ bùng phát bệnh BSE.[3]

Xúc xích được ăn sống hoặc hầm, điều này giúp nó có độ mềm dễ phết sau khi bóc vỏ. Vào mùa đông, nó cũng được ăn kèm với Grünkohl (cải xoăn).

Tên Bregenwurst bắt nguồn từ từ Bregen (hoặc Brägen) trong tiếng Hạ Đức có nghĩa là "não".[4]
