Si Choi Min-soo (ipinanganak Marso 27, 1962) ay isang artista mula sa Timog Korea. Ipinanganak siya sa Seoul noong 1962. Aktibo ang pamilya ni Choi sa pag-arte at pag-awit. Si Choi ay anak nina Choi Moo-ryong, isang tanyag na aktor noong mga dekada 1960 at dekada 1970, at Kang Hyo-shil, isang artista din. Mayroon siyang tatlong kapatid at isang kapatid na babae sa ama na mula sa pagkakasal ng kanyang ama kay Kim Ji-mee. Mayroon din siyang dalawa pang kapatid sa ama mula sa iba pang pagkasal ng kanyang ama sa ibang babae.[2]

Nagsimula si Choi sa industriya ng pelikula noong 1985 sa paglabas niya sa Son of God, isang pelikulang hango sa manhwa ni Park Bong-seong na may kaperohong pangalan.[3][4]
