Crispy Lotus Blossom Cookie (Kanom Dok Jok, ขนมดอกจอก) is a beautiful traditional Thai dessert shaped in the form of a lotus. "Dok Jok" means lotus and this water plant can be found throughout Southeast Asia. If you have a brass mold in the form of a lotus, it is really easy to do this dessert at home. However, you can use any other kind of mold if you don't have a lotus shaped. It is crunchy, fried and sesame nutty. This is the funnel cake equivalent of the Lao world. It is called kanom dok bua in Lao. Dok bua means lotus. In Thai, it is known as kanom dok jok.

Ingredients (for 3-4 portions)

1. 250 g rice flour

2. 50 ml coconut milk

3. 65 ml red lime water

4. 120 g sugar

5. 1/2 TSP salt

6. 1 TSP black sesame

7. palm oil for deep-frying

Preparation

1. Mix the ingredients together, take a bowl and first put in the dry ingredients, i.e. rice flour, sugar, salt

2. Then add the lime water and coconut milk

3. Mix everything together well and finally add the black sesame

4. Take a pan or wok and heat the palm oil for frying

5. Prepare the mold by first putting it into the oil and then dip the mold into the batter

6. Put the mold into the hot oil and let it fry until the batter hardens

7. Shake the mold gently so that the cookie separates from the mold

8. Repeat the process and let all cookies fry until they are golden

9. Finally, let the cookies cool down on small cups
