Middle Asian Kanish with Meat and Onion

Kanish is a very famous Middle Asian traditional recipe that was first passed along through many traditions through word of mouth. Kanish is a fairly simple food to make.

In order to make Kanish, one first has to prepare the dough and wait for it to rise. The second step is to prepare the meat. Any type of meat can be used depending on ones personal preference, such as lamb, beef, veel, and in some cases even pure chicken. After one chooses the type of meat and after throughly washing and working the meat, one has to take a clean cutting board and begin cutting the meat into small square pee size like shapes. Then one has to cut a freshly peeled onion into small thin pieces and mix it up with the meat. Then mainly pepper and salt will be needed to sprinkle on top of the mixture in addition to other seasonings that one can use based on personal taste. While the mixture of meat and onion are absorbing the seasonings, one has to roll the dough into a very thin pizza like pie right before it begins to break. Then one can cut the dough into different shapes and sizes such as a rectangular, circular, triangular, etc... then put the mixture into the dough and and tie it up into the desired shapes. Then one egg yolk has to be beated and then with a pastry paint brush, has to be painted on the dough. Then other external seasonnings can be appied such as sesame seeds. After this it will have to go to an oven for baking. While the Kanish are baking, one can prepare a tomato salad. Then you will be ready to eat the beautifully made Kanish. Viola you are done. Bon appetit.
