Ruthie's Rolling Cafe is a food truck company based out of Dallas, Texas. Ruthie's Rolling Cafe serves gourmet grilled cheese sandwiches made fresh-to-order. The company was started by Ashlee Hunt Kleinert in 2011 as one of the first food trucks in Dallas and has since expanded to serve the greater DFW metroplex including office buildings, college campuses and local Dallas-area schools, and private parties.

Ruthie's is a Dallas-based food truck company offering gourmet grilled cheese sandwiches made fresh-to-order. Ruthie's Rolling Cafe customers can choose from a wide variety of cheeses, meats, veggies, and sauces to add to their grilled cheese off of the Ruthie's menu. Ruthie's Rolling Cafe Food Trucks also can offer gluten free bread, or lactose intolerant cheese for those patrons with dietary restrictions. Ruthie's owns and operates four food trucks, the newest of which is for the opening celebration of Union Park in downtown Dallas.

Ruthie's Dozen is a promotional benefit for a different nonprofit organization from the Dallas area for each month of the year. According to the owner, the idea for Ruthie's Dozen was inspired Ashlee Hunt Kleinert's grandmother, who was the inspiration for starting the business in 2011. Ruthie's Dozen features and benefits include one month broadcasting via social media about the selected nonprofit and information they wish to share - who they serve, statistics or information surrounding their cause. Ruthie's also donates 10% of its net profits that month to the selected nonprofit.
