Early Life and Influence

Chad Robertson grew up in Texas. From an early age, Robertson had a interest in food and initially wanted to become a  chef instead of a baker.This interest in food led him to an education in the culinary world.

Education and Bread Awakening

[edit] At the Culinary Institute of America (CIA) in Hyde Park, New York, Robertson received his first official culinary education.  He developed an interest in baking at this period, although initially it was only a small part of his larger culinary studies. Robertson was interested in working with dough, as well as the process of fermentation and natural leavening.

Robertson received guidance from master bakers, especially those who specialized in traditional, naturally fermented bread to figure out his bread recipe. He learned traditional baking methods through working with an apprentice for artisan bakers in France and the United States. His future bread-making discoveries were founded on his regard for natural processes and gentle fermentation.
