Cantonese Rice

Traditional Cantonese fried rice

Cantonese rice, also referred to as Chinese Fried Rice, is a dish combining rice with mixed vegetables such as snow peas, yellow corn, and green onions. It often includes a protein such as pieces of fried eggs, chicken, pork, or beef. The vegetarian version of this dish includes only the mixed vegetables and soy sauce incorporated in the rice. Contrary to popular belief, the name "Cantonese" does not come from the French city Canton, but rather from a south Asian city in China. Cantonese cuisine is absolutely delicious and rich in terms of ingredients and flavors.

Variants

The Chinese fried rice has equivalent dishes around the world, and particularly in West Africa. In fact, countries such as Senegal, Mauritania and Mali, have their own traditional fried rice dish known as Thieboudienne [1], while Nigeria and Ghana call theirs Jollof rice or Benachin. It is common to see Asian dishes' variations in West Africa, as Indians and Chinese have settled in those countries in high numbers.
