Ellie Hyppolite played college football at Florida Agricultural and Mechanical University (Florida A&M) as a defensive end. He was listed at 6 ft 4 in (1.93 m),280 lb and competed for the FAMU Rattlers during the early 2010s. Hyppolite appeared in 22 games at Florida A&M, where he wore jersey number 69 and played on the defensive line. During his playing career at FAMU he accumulated 15 sacks, 36 TFL and 55 tackles in 2 years.

Before transferring to Florida A&M, Hyppolite played Junior College at Erie Community College, where he recorded 54 tackles, 17 tackles for loss, and nine sacks in one season. His performance there led to recruitment interest from multiple Division 1 programs, including Western Michigan, Marshall and Buffalo, prior to his enrollment at FAMU.

Following the completion of his collegiate eligibility, Hyppolite participated in Florida A&M’s Pro Day, where he worked out for National Football League (NFL) scouts alongside other former FAMU players. His participation gained interest from NFL Teams that included Oakland Raiders where he was brought in as UDFA ibefore being released.

Hyppolite was also evaluated by DraftScout in connection with the 2013 NFL Draft, which listed him as a defensive line prospect based on his college career and pro‑day measurements
