Adam Gottschalk (born 1984 in New York City) is the creator and host of OTR Food & History[1] and a former chef[2] and sports commentator.[3]

Early Life

Adam Gottschalk was born in New York in 1984 to Robert (d. 2002) and Julie Gottschalk. He was raised outside Charlottesville, Virginia on a farm, which included goats, llamas and donkeys.[4]

Gottschalk began working as a radio host for WINA and the University of Virginia Sports Network while attending Albemarle High School, and served as a play-by-play announcer for ACC events through 2008, before spending two years as a talk show host for Fox Sports Radio.[5]

From 2006-2008 Gottschalk hosted an entertainment podcast along with college friends including current Chicago Bears Assistant GM Ian Cunningham and current TCU Offensive Coordinator Gordie Sammis.[6]

Restaurant Career

Adam Gottschalk worked part-time in restaurants in Charlottesville including Mellow Mushroom Pizza and volunteering in the kitchen of the legendary Peter Chang at A Taste of China.[7] Gottschalk would move to China in December 2010 and work in Chinese kitchens and as a food tour host[8] beverage importer[9] before opening his first restaurant in Beijing in 2015[10] and adding two more restaurants the following year including Sidd Finch's Pub on Tiananmen Square.[citation needed]

After the 2017 hutong demolitions[11] Gottschalk spent a year consulting on restaurants across Asia before opening Cabana on the Dapeng Peninsula, and Keg Room and Starling in Shenzhen, which would both expand to multiple locations.

OTR

In 2021 Gottschalk and partner Daria Burdinskaia would relocate to Bangkok during COVID[12] and start OTR Food & History YouTube Channel with assistance and encouragement from longtime friends Chris & Steph of Chinese Cooking Demystified.[13] As of January 2026 the channel has amassed more than 300,000 subscribers and been viewed by more than 22 million people.[14]

Personal Life

Adam and Daria reside in Bangkok with their two rescue dogs, Blanca and Vango.[15] Outside of the channel, Adam plays tennis[16] and guitar and drums. He is a lifelong supporter of the Washington Capitals hockey team and the NFL's Buffalo Bills.
