Himbeergeist

Himbeergeist được làm từ quả mâm xôi dại ở vùng Rừng Đen của Đức.

Himbeergeist (nghĩa đen là "rượu mâm xôi", còn được gọi là rượu mâm xôi thu được bằng phương pháp ngâm và chưng cất,[1] eau de vie de framboise[2] hoặc đơn giản là framboise[3]) là một loại rượu (một loại eau de vie hoặc Schnapps) được làm từ quả mâm xôi. Nó được sản xuất chủ yếu ở Đức và vùng Alsace của Pháp.

Thay vì chưng cất hỗn hợp lên men từ trái cây tươi thành rượu mạnh, giống như rượu brandy trái cây (Obstler trong tiếng Đức), Himbeergeist được làm bằng phương pháp ngâm.[4] Quả mâm xôi có hàm lượng đường thấp, chỉ có thể tạo ra một lượng cồn hạn chế, vì vậy Himbeergeist được tạo ra bằng cách ngâm quả mâm xôi tươi trong rượu mạnh trung tính tinh khiết 96%.[5][6] Hỗn hợp sau đó được ngâm trong vài tuần để chiết xuất tinh chất mâm xôi, chưng cất, pha loãng với nước tinh khiết và đóng chai với nồng độ cồn 37,5% hoặc cao hơn. Các nhà sản xuất có thể thêm một lượng nhỏ đường để làm tròn vị cuối cùng, nhưng theo luật EU, lượng đường này không được vượt quá 10 gam đường nghịch đảo trên mỗi lít. Việc thêm màu và hương liệu cũng không được phép.[1]

Cần khoảng 7,7 kg quả mâm xôi để sản xuất một lít Himbeergeist.[7] Theo truyền thống, thức uống này được phục vụ ở nhiệt độ dưới nhiệt độ phòng, nguyên chất, trong ly tulip có rãnh.[2][6]
